I used to be the person who skipped breakfast entirely. Grab a coffee, rush out the door, and wonder why I was starving and irritable by 11 AM. Living in Dubai, where mornings can be hectic with traffic, meetings, and content shoots, I had to find a better system. These ten recipes are what saved my mornings — they are quick, genuinely healthy, and actually taste good enough that I look forward to waking up.

1. Overnight Oats with Mango and Cardamom

This is my go-to because you make it the night before and just grab it from the fridge. I mix rolled oats with almond milk, a spoonful of chia seeds, a pinch of cardamom, and top it with fresh mango in the morning. The cardamom gives it this beautiful warmth that reminds me of home. Five minutes of prep the night before, zero effort in the morning.

2. Avocado Toast with Za'atar and Chilli Flakes

I know avocado toast is a cliche at this point, but adding za'atar changed everything for me. The nutty, herby flavour of za'atar with creamy avocado on sourdough is incredible. I sprinkle some chilli flakes and a squeeze of lemon on top. The whole thing takes about three minutes and keeps me full until lunch.

On days when I know I will be in front of the camera, I reach for this. Blend spinach, frozen banana, a handful of berries, and a scoop of protein powder with a splash of coconut water. Pour it into a bowl and top with granola, coconut flakes, and sliced almonds. It is packed with nutrients, tastes like a treat, and photographs beautifully — which is a bonus in my line of work.

4. Egg Muffins — Make a Batch on Sunday

These are a game-changer for meal prep. Whisk eggs with diced vegetables — I use bell peppers, spinach, and cherry tomatoes — pour into a muffin tin, and bake for about twenty minutes. Living in the UAE has introduced me to so many incredible ingredients, and labneh is one of my favourites. This thick, creamy strained yoghurt drizzled with honey and topped with crushed walnuts is the simplest breakfast that somehow feels luxurious. I sometimes add a sprinkle of cinnamon or some fresh berries. Two minutes, no cooking required.

6. Banana Pancakes — Two Ingredients Only

Mash one ripe banana and mix it with two eggs. That is literally it. Cook them like regular pancakes on a non-stick pan. They are naturally sweet, gluten-free, and surprisingly fluffy. I top mine with a drizzle of date syrup — another UAE staple I have fallen in love with. Perfect for weekends when you have an extra five minutes.

7. Chia Pudding with Coconut and Berries

Similar to overnight oats in the convenience factor. Mix chia seeds with coconut milk the night before, and by morning they have turned into this gorgeous pudding. I layer it with mixed berries and a handful of toasted coconut. It is light but filling, and the texture is something you genuinely start craving.

8. Shakshuka — Weekend Special

When I have a slower morning, shakshuka is my absolute favourite. Eggs poached in a spiced tomato sauce with cumin, paprika, and a touch of harissa. I serve it with warm pita bread and it feels like a hug. This one takes about fifteen minutes, so I save it for weekends or work-from-home days. It is worth every minute.

9. Peanut Butter and Banana Wrap

For the mornings when I am literally running out the door — spread natural peanut butter on a whole wheat wrap, add sliced banana, a drizzle of honey, and roll it up. You can eat it one-handed in the car (not that I am encouraging that). It is filling, gives you sustained energy, and tastes like dessert.

This is what I grew up eating, and it still makes regular appearances in my kitchen. Whisk eggs with finely chopped onion, green chilli, coriander, and a pinch of turmeric. Cook it in a little ghee. I spend about twenty minutes on Sunday prepping for the week: making overnight oats, baking egg muffins, and setting up chia puddings. That way, my weekday mornings require almost zero thought. I also keep my pantry stocked with the basics — oats, eggs, nut butters, frozen fruit, and labneh — so I always have options.

Breakfast does not need to be complicated or time-consuming. It just needs to fuel you properly so you can tackle whatever your day throws at you. Trust me, once you get into the habit, you will never go back to skipping it.
